ALL ABOUT TEFF

Teff is a grain from an annual plant grown in the Africa region, particularly Ethiopia, with more than 90 percent of the world’s teff come from Ethiopia. There are two crop periods: one between March and June, and from July to November.

TYPES OF TEFF

Teff has a delicious, nutty flavor and comes in three different varieties: white, brown and red, with each characteristic best suited to each specific condition.

Brown teff

Brown teff come from hardier plants and have a more pronounced flavor than white teff, its taste is more like hazelnut and can be used like oatmeal.

White teff (also known as Ivory teff)

Is the most expensive form of teff. In Ethiopia, white teff was reserved for the wealthiest and most prestigious families. White teff tastes a little like chestnuts and can only be grown in the Central Highlands of Ethiopia.

Red teff

Red teff is the least expensive and least popular, but it is very high in iron. Today in Ethiopia, red teff is becoming more popular related to its increased iron content.

FORMS OF TEFF

Teff can be found as a grain and in flour form.

GRAIN

Teff grains consist primarily of the bran and germ. Since the bran and germ are the most nutritious part of any grain, this makes teff extremely nutrient dense. The grain is gelatinous when cooked and will act as a thickener.

FLOUR

Teff flour is a gluten-free flour, which makes it a great option for people with Celiac disease and other gluten sensitivities. They can be used to make bread or porridge.
