Pumpkin seeds or Pepitas are seeds inside pumpkins. Seeds after removed from the flesh may be washed if necessary and dried in trays to safe moisture content of 6 to 8%.

 The world’s top producers of pumpkin seeds include China, India, Ukraine, the United States, Egypt and Mexico. In the United States, the market for pumpkins is considered limited and seasonal.

DIFFERENCE BETWEEN PUMPKIN SEEDS AND PEPITAS

The term Pumpkin seed and Pepitas are sometimes used interchangeably. However, there is a difference between the two. Pumpkin seeds are the white or cream ­colored, oval­shaped seeds you find inside of pumpkins, they are typically roasted in the shell.

Pepitas are seeds without a hull. But there’s not some mysterious machine removing the tough white shells from pumpkin seeds. Instead, pepitas come from what are known as “oilseed pumpkins” or Styrian pumpkins, which produce pumpkin seeds that have a thin, papery shell.
