Chia is obtained from the flowering Salvia hispanica plant, which is a member of the mint family, native to central and southern Mexico and Guatemala. The quality of Chia seeds are based on upon three major factors
1 - Colours – Black, White or Brown?
Black and white:
Chia seeds are either black speckled or white. Black chia seeds are from the plant with purple flowers and white chia seeds are from the plant with white flowers. Black chia is believed to have slightly more antioxidants, while white chia is said to have slightly more protein, and is milder in taste. However, In fact neither one is preferred over the other by nutrition experts.
What if the colour is brown?

2 - Purity or the existence of foreign factors
Bad quality means the existence of weeds, leaves, particles from the crop itself, other seeds, whatever which is not chia seed itself.
3 - The moisture level of the seeds
The moisture level effects significantly the quality of chia seeds, particularly their shelf life. Making sure the highest moisture is 8% will guarantee a 2 year-shelf life if stored cool and dry.
